Ingredients:
- 1 lb Pork Tenderloin (cut into bite-sized pieces)
- Salt and pepper, to taste
- 3 tablespoons olive oil

- 2 cloves of garlic (minced)
- 1 cup sliced mushrooms
- 1 tablespoon all-purpose flour
- 2 cups beef broth (low sodium)
- 1 cup sour cream
- 1 pound egg noodles (cooked)
- Fresh parsley (chopped, optional)

Instructions:

Season pork with salt and pepper to taste.

In a large skillet or pan, heat vegetable olive oil over medium-high heat. Once hot, add the pork pieces and sear until golden brown, about 5 minutes. Remove the pork from the pan and set aside.

In the same skillet, add the diced onion and sauté for 2-3 minutes until translucent.

Stir in the minced garlic and sliced mushrooms, and cook for another 3-5 minutes until the mushrooms are soft and golden brown.

Sprinkle the tablespoon of flour over the onion, garlic, and mushroom mixture. Stir to incorporate the flour and cook for another minute.

Gradually pour the beef broth into the skillet while constantly stirring. Bring the mixture to a simmer.

Add the seared pork, cover, and simmer for 10-15 minutes until the pork is cooked through and the sauce has thickened.
