Ingredients:

– 4 bone-in, skin-on chicken thighs (approximately 1.5 lbs.)
– 6 tbsp. dijon mustard
– 2 tbsp. honey
– 2 tbsp. minced fresh thyme
– 2 tbsp. olive oil
– 1 tsp. salt
– 1 tsp. freshly ground black pepper

1. Preheat the oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top.

2. Season the chicken thighs with salt and black pepper. Make sure they are evenly coated.

3. In a small bowl, mix together the dijon mustard, honey, minced thyme, olive oil, salt, and black pepper. Stir well to form a smooth glaze.

4. Place the seasoned chicken thighs on the wire rack with space in between.
